Ingredients

  • 295 g oat milk
  • 7 g active yeast
  • 50 g caster sugar
  • 88 g dairy-free butter
  • 5 g vanilla extract
  • 4 g salt
  • 500 g plain flour
  • 360 g icing sugar
  • 118 g oat milk (for glaze)
  • 9 g vanilla extract (for glaze)

Method

  1. Whisk milk, yeast, and 1 tsp sugar together and let sit 10 min.
  2. Beat butter and sugar until creamy.
  3. Add vanilla and salt.
  4. Mix in yeast mixture gradually.
  5. Add flour gradually and mix until dough forms.
  6. Knead 10 mins until smooth.
  7. Let rise in oiled bowl for 1 hr.
  8. Roll out to 1 cm thick, cut shapes.
  9. Re-roll excess and repeat.
  10. Let rise on tray 1 hr.
  11. Heat oil to 180°C and fry 1–2 min per side.
  12. Drain on paper towels.
  13. Make glaze and dip cooled doughnuts.
